Kernow Fires Everhot Mushroom Risotto

EVERHOT MUSHROOM RISOTTO

Serves 4

Ingredients

1oz butter-
1 tbsp Rapeseed oil
1 onion-chopped
1 clove garlic-chopped
1 yellow pepper deseeded and-diced
225g Arborio rice
450ml vegetable stock
150ml white wine
225g sliced mushrooms
2 tbsp chopped parsley
60g finely grated parmesan
2-4tbsb pouring cream

Method

1. Place the oil and butter into a casserole and place on to the boiling plate, sauté the onion, garlic and pepper for a few minutes until softening.

2 add the sliced mushrooms to the casserole and cook for a couple of minutes

3. Add the rice, stir the mixture well and season. Pour in the wine, stir well, add the stock and bring to the boil, cover with a lid.

4. Place into the simmer oven on the shelf on the oven floor for 20 mins

5. Remove from the oven. Remove the lid gently stir adding the parmesan, parsley and cream, check the seasoning and serve.
