Everhot White Chocolate Cheesecake

Ingredients

1pkt chocolate biscuits

100g butter-melted

700g cream cheese-full fat

300ml sour cream

4oz caster sugar

4eggs

100g melted white chocolate

1 tsp vanilla extract

Grated rind of 1 lemon

Method

Crush the biscuits and stir into the melted butter.

Spoon into a 23cm spring form tin, lined in the base. Press down the biscuit mixture well into the base.

Place the tin into the fridge to firm and set.

Place the cream cheese, sour cream, vanilla, sugar, lemon rind, eggs and sugar into the kitchen aid bowl and using the beater mix well until smooth, remove from the machine.

Pour into the spring form tin.

Bake in the roasting oven set at 200c for 15 minutes then move to the centre of the simmer oven set at 100c for 2 hrs until firm.

Cool completely and serve chilled with raspberries
